Ice Fish (Shirauo) from Saga








There are no photo, but we also got some Yellow Back Snapper (Umeiro), Sparkling Squid (Hotaru Ika), Big Fin Leaf Squid (Aori Ika), Gnome Fish (Medai), Golden Eye Snapper (Kinme Dai) etc...




Chilled Monk Fish Nikogori, served with spicy miso sauce.
Nikogori : By chilling the broth, elements in the skin and bones become like a jelly full of umami of the fish.

This dish works beautifully with warmed sake, the Nikogori melting in the mouth with the warmth of sake .
